Toyosu Market in Tokyo is the world’s largest wholesale fish market. It sells as many as 500 species from all over the globe via specialist brokers called “nakagainin”. These nakagainin must have the ability to pick out exactly which fish will best suit for each customer’s unique needs, because quality of fish differs very much according to the condition of when, where and how the fish have been supplied.
The ability to judge quality at a glance is traditionally known as “mekiki” in Japan. We’ll see it in the daily trade repeated at Toyosu Market.
